Pizza with tomato pesto, Danish bacon, Haloumi, EggToday is a real hot day in Dubai; about the same temperature as my troubled F: hard disk, 46° Celsius! This means a lazy day at home in cooling air condition, music, movies and Pizza! In Europe you would do this during the cold winter month; here it is the reverse. The shopping trip to the local store was already a drag; it almost dehydrated me on the way back. I am not a big pizza fan I must admit. This is not because I do not like pizzas, no, I love it but out of 100, 99 are just plain disgusting. Any take away pizzas taste the same as the box delivered in. The worst pizza I ever had was in Venice, Italy! The best I had was in a small Pizzeria in Leicharth, Sydney, Australia. In between I was almost every time disappointed. I usually stay away from “meat lovers”, “4 cheeses” and “the whole lot” kind of pizzas. My favorite would be Margarita or something with Truffle oil. After careful preparation of the pizza dough, I set the dough to rest for almost four hours in room temperature, every two hours I refreshed the air, therefore achieved a very elastic dough. Tomato pesto, tomato, Danish bacon and Haloumi cheese with hard boiled egg where the choice of topping. After 8 minutes in a very hot oven I garnished the pizzas with a small salad tossed in peach vinegar and sprinkled with some sea salt, black pepper and a sprig of Rosemary. .
