Anjou Pear & Apple Custard

Happy New Year!

Anjou Pears, green and red are now readily available in stores here in Dubai. This calls for a small winter dessert, after all that eating over the festive season just the prefect size!

Makes 4 portion

2 pcs Anjou Pears, peeled and cut in quarters

50 gram Honey

10 gram Lemon juice

300 gram Milk

30 gram Sugar

1 pcs Vanilla bean split

1 pcs Egg whole

1 pcs Egg Yolk

25 gram Custard Powder

4 pcs Apple Raisin Strudel cookie

Method

Combine the lemon juice with the pear quarters. Heat the honey in a sauce pan and saute the pears until caramelized. Set aside to cool.

Bring the milk with sugar and vanilla to the boil. Scrape and remove the vanilla. Mix the eggs with custard powder and stir into boiling milk. Cook gently to a smooth custard.

Place some of the broken cookies into cups and pour some of the custard over. Place the caramelized pears into the cups and fill with custard. Set in chiller to cool. Decorate with some broken cookis ndwith icing sugar.
