Swiss Christmas Cookies

One of the more traditional events in any Swiss bakery is and must be the baking of Christmas cookies. They have not much changed over generations and deeply inbedded in the Swiss way of celebrating Christmas. My father used to buy these cookies from our local baker, not knowing years later I will bake them myself on Christmas year after year! One of those cookies are found only in Switzerland due to the taste and shape; “Chräbeli”. Below I have the recipe in German, as written in my recipe book from my time in Switzerland.


4 Eier, 500 g Zucker, 3 Esslöffel Anis, 1 Prise Backpulver, 500 g Mehl, 1 Esslöffel Kirsch, Zitronen schale, geraffelt


Eier, Zucker, Anis und Kirsch in einer Schüssel verrühren, bis die Masse hell ist. Dann das Mehl hinzufügen und zu einem Teig kneten. Den Teig ca. 1 cm dick auswallen, einen bemehlten Model aufdrücken, das Teigstück ausschneiden und auf einem leicht eingefetteten Backblech gut trocknen lassen. Das Gebäck dann während etwa 20-25 min bei 140 °C backen. Ingredients 4 Eggs, 500 gram Sugar, 3 Tablespoon Anis, 1 pinch Baking powder, 500 gram Flour, 1 Tablespoon Kirsch water, Lemon zest Method Whisk eggs, sugar, anis and kirsch water until pail in color. Fold in flour and knead to a soft dough. Roll the dough to 1cm rolls and cut the cookies 3cm long, Cut the side and set on buttered and dusted baking tray. Let dry in room temperature before baking at 140 °C for 20-25 minutes.
