To prepare a dish like salmon and pasta is easy enough but it takes the best ingredients to cook this dish to perfection. The salmon should be firm and pink in color, not mushy or pail. Fresh egg pasta, free range eggs, freshly grated Parmesan, butter, mushroom and basil.

For above dish I used my newly acquired Truffle salt and pistachio-Parmesan Pesto from Italy. Seasoned the salmon fillet with salt and fresh black pepper before pan-fried. For the pasta sauce I sautéed the sliced mushroom in little olive oil. Then added the chopped onion and garlic with some butter. In a separate bowl I combined some egg yolks and grated Parmesan cheese and combined the cooked pasta with the mushroom and Parmesan yolks. Seasoned with Truffle sea salt and fresh black pepper.

I love truffle salt in a fresh green with a drizzling of truffle oil. The salmon looks delicious and the pasta so silky.
