Using Maracaibo chocolate to create a dessert is always a great way to receive fabulous comments from your dinner guests. Using different ingredients in marriage with Maracaibo will result in a rave of comments! Here I used a double cream from France with Fleur de Sel, French sea salt and Pinot reduction for the fruitiness. A very classic dessert with some unexpected flavors.

Here are some pictures from my week in New York last week, we did a VIP dinner for the US government and Spanish Embassy. We are leaving for an interesting trip to Syria and Damascus next week (If Beirut airport does not remain closed) where we will be driving the land border between the 2 countries 3 times so I will send you these pictures when I get back at the end of the month, should be another good story!Kind Regards,
